Soma, a sushi restaurant, opens tomorrow in Fort Lee.
Owner May Lee, who has a background in the beauty industry, saw an opportunity during the pandemic to open a sushi restaurant. She dove in headfirst and has been working on this project since June 2021.
Their executive chef Yoji Matsuzaki comes from Sushi of Gari and runs the sushi menu. The head chef also has extensive experience in Japanese cuisine and has worked in many Japanese restaurants in the city.
The concept of the restaurant is to “honor traditional Japanese cuisine” using “the highest quality ingredients” at an “affordable price”.
The menu consists mainly of traditional Japanese dishes with some fusion menu items. They will be serving lunch and dinner as well as an 18-course omakase experience at the sushi counter.
The approximate seating capacity is 98, including our private event rooms. The total square footage is just under 5000, not sure what the usable square footage is after construction.
